As <strong>in</strong> the past, the geographic distribution of production <strong>in</strong>creases will largely<br />

mirror that of consumption. Most future growth is expected to occur <strong>in</strong> develop<strong>in</strong>g<br />

countries, especially East Asia, South Asia <strong>and</strong> sub-Saharan Africa.<br />

Medium-term projections for the period 2012–21 (OECD–<strong>FAO</strong>, 2012) appear <strong>in</strong><br />

l<strong>in</strong>e with the longer-term trends highlighted by Table 2.7. Although the price hikes<br />

dur<strong>in</strong>g the food-price crisis of 2007–08 <strong>and</strong> the ensu<strong>in</strong>g economic crisis reduced<br />

dem<strong>and</strong> <strong>and</strong> illustrated the high price <strong>and</strong> <strong>in</strong>come elasticity of dem<strong>and</strong> for dairy<br />

products, the Organisation for Economic Co-operation <strong>and</strong> Development (OECD)<br />

<strong>and</strong> <strong>FAO</strong> project a return to steady consumption growth driven by grow<strong>in</strong>g populations,<br />

ris<strong>in</strong>g <strong>in</strong>comes <strong>and</strong> a grow<strong>in</strong>g popularity of dairy products <strong>in</strong> develop<strong>in</strong>g<br />

countries. The strongest dem<strong>and</strong> growth is expected <strong>in</strong> Ch<strong>in</strong>a <strong>and</strong> India.<br />

Accord<strong>in</strong>g to OECD <strong>and</strong> <strong>FAO</strong>, the milk <strong>and</strong> dairy sector will rema<strong>in</strong> one of the<br />

fastest-grow<strong>in</strong>g agricultural subsectors over the com<strong>in</strong>g decade <strong>in</strong> terms of production,<br />

only exceeded by poultry meat <strong>and</strong> vegetable oils. They project global milk<br />

production will exp<strong>and</strong> at an annual rate of two percent over the 2012–21 period,<br />

similar to that of the last decade (Table 2.8). Aga<strong>in</strong>, most of the expansion <strong>in</strong> output<br />

is projected to occur <strong>in</strong> the develop<strong>in</strong>g countries. All develop<strong>in</strong>g country regions are<br />

projected to see susta<strong>in</strong>ed growth <strong>in</strong> production, with the highest rates of growth <strong>in</strong><br />

sub-Saharan Africa <strong>and</strong> India. Growth <strong>in</strong> Ch<strong>in</strong>a is projected to slow as the <strong>in</strong>dustry<br />

has matured. India is projected to consolidate its position as the world’s largest producer,<br />

<strong>in</strong>creas<strong>in</strong>g its share of global production from 16.4 percent to 18.8 percent.
