KEYNOTE SESSION 8 th Int. Conference on <strong>LCA</strong> <strong>in</strong> the<br />

Agri-<strong>Food</strong> Sector, 1-4 Oct <strong>2012</strong><br />

We could not feature talk<strong>in</strong>g about susta<strong>in</strong>able food systems without discuss<strong>in</strong>g the role of consumers.<br />

Indeed, the progress realised by sectors could not deliver if consumers did not adapt their behaviour. The<br />

Collective Scientific Expertise by INRA (Etiévant <strong>et</strong> al., 2010) on the d<strong>et</strong>erm<strong>in</strong><strong>in</strong>g factors on di<strong>et</strong>ary behaviour<br />

of French people underl<strong>in</strong>ed the difficulty of chang<strong>in</strong>g <strong>in</strong>dividual practices. Here aga<strong>in</strong>, a comb<strong>in</strong>ation<br />

of several tools appears to be necessary.<br />

In this field, the agri-food sector can be considered as a pioneer with regard to the nutritional aspects: generic<br />

consumer <strong>in</strong>formation such as "5 fruits or veg<strong>et</strong>ables a day", community schemes to distribute milk and<br />

fruit <strong>in</strong> schools, nutritional rules <strong>in</strong> French school canteens and the labell<strong>in</strong>g of nutritional characteristics on<br />

products are all tools created to educate consumers throughout their daily life with a view to eat<strong>in</strong>g a varied<br />

and balanced di<strong>et</strong>. Confronted with the new questions of susta<strong>in</strong>ability, the agri-food sector is now widen<strong>in</strong>g<br />

its consumer-focused action to me<strong>et</strong> other challenges. The profession is highly <strong>in</strong>volved <strong>in</strong> the development<br />

of environmental labell<strong>in</strong>g, particularly <strong>in</strong> <strong>France</strong> and Europe.<br />

A large amount of research rema<strong>in</strong>s to be conducted <strong>in</strong> the food sector, as highlighted by the Agrimonde<br />

(Paillard, Treyer and Dor<strong>in</strong>, 2010) and duALIne (Esnouf <strong>et</strong> al., 2011) foresight studies by INRA and CIRAD.<br />

These two studies converge <strong>in</strong> underl<strong>in</strong><strong>in</strong>g the importance of di<strong>et</strong> <strong>in</strong> susta<strong>in</strong>able food. In particular, with regard<br />

to the environmental impacts of eat<strong>in</strong>g habits, the essential role of both quantities consumed and the<br />

consumption of animal products <strong>in</strong> the di<strong>et</strong> has been stressed.<br />

DuALIne also shows that an <strong>in</strong>tegrated approach to susta<strong>in</strong>ability <strong>in</strong> food research must urgently be developed.<br />

Therefore the ANR (National Research Agency <strong>in</strong> <strong>France</strong>) launched the ALID (susta<strong>in</strong>able food<br />

systems) research program. After two years of calls for proposals, we can draw the conclusion that <strong>in</strong>duc<strong>in</strong>g<br />

communities of researchers to update their work<strong>in</strong>g m<strong>et</strong>hods and jo<strong>in</strong>tly address the three challenges of susta<strong>in</strong>able,<br />

economic, environmental and social development (<strong>in</strong>clud<strong>in</strong>g the significance of health <strong>in</strong> relation to<br />

food) is not easy. In <strong>2012</strong>, more projects were correspond<strong>in</strong>g to the spirit of the calls and this progress is to<br />

be praised. Two projects <strong>in</strong> particular are plann<strong>in</strong>g to work on the assessment of agri-food products accord<strong>in</strong>g<br />

to the three dimensions of susta<strong>in</strong>able development and <strong>in</strong> particular to reduce their impacts. Non<strong>et</strong>heless,<br />

this type of project rema<strong>in</strong>s all too rare. This demonstrates the scale of the challenge to be m<strong>et</strong> by research<br />

teams <strong>in</strong> terms of susta<strong>in</strong>able development.<br />

2.4 Action on agri-food processes<br />

<strong>Food</strong> susta<strong>in</strong>ability is also to be achieved through significant improvements <strong>in</strong> processes and channels.<br />

We would just mention here two directions for deliberation and research.<br />

The first one is <strong>in</strong>spired by the physiology of liv<strong>in</strong>g organisms: observ<strong>in</strong>g that to feed their chicks, adult Emperor<br />

pengu<strong>in</strong>s could regurgitate fish that had rema<strong>in</strong>ed fresh <strong>in</strong> their stomach after several days, Hubert<br />

Curien Institute <strong>in</strong> Strasbourg (<strong>France</strong>) understood the process and isolated a molecule which stops the d<strong>et</strong>erioration<br />

of tissues. This discovery was at the root of patented applications that replace the use of refrigerators.<br />

The second one arises from observ<strong>in</strong>g the <strong>in</strong>creas<strong>in</strong>g vulnerability of crops to various hazards, and the<br />

significant robustness of comb<strong>in</strong>ed or mixed crops, to question the capacity of agro-<strong>in</strong>dustries to <strong>in</strong>crease the<br />

security of their supply by improv<strong>in</strong>g their plasticity. Distributors and consumers will also be concerned!<br />

Follow<strong>in</strong>g conclusions can be drawn from these considerations on the susta<strong>in</strong>ability challenges for the<br />

agri-food sector:<br />

the necessity for the State and private stakeholders to comb<strong>in</strong>e a wide range of <strong>in</strong>struments for<br />

<strong>in</strong>tervention, as the challenges of susta<strong>in</strong>able food are themselves multiple and there cannot be a<br />

s<strong>in</strong>gle solution;<br />

the importance of actions targ<strong>et</strong><strong>in</strong>g consumers, with a result which rema<strong>in</strong>s unforeseeable; here<br />

aga<strong>in</strong>, a comb<strong>in</strong>ation of tools is essential to be effective;<br />

strengthen<strong>in</strong>g actions targ<strong>et</strong><strong>in</strong>g consumers for themes other than nutrition is one key of the<br />

susta<strong>in</strong>ability of the agri-food sector; the need for more objective environmental <strong>in</strong>formation <strong>in</strong><br />

particular has been identified, giv<strong>in</strong>g guarantees to the consumer;<br />

f<strong>in</strong>ally, the need for research to progress <strong>in</strong> the assessment of environmental and social impacts of<br />

both consumption and production, impacts that rema<strong>in</strong> complex if we want to take account of all the<br />

challenges; the question of di<strong>et</strong>s and their susta<strong>in</strong>ability is at the heart of the research questions:<br />

many foresight models show that a change <strong>in</strong> di<strong>et</strong> of rich populations through the world towards<br />

fewer animal prote<strong>in</strong>s is essential to prepar<strong>in</strong>g a plan<strong>et</strong> viable for 9 to 10 billion.<br />
