k<strong>et</strong> composition counterbalances the higher purchased food amount has been proven. In the context of research<br />

to identify new consumption modes, our results are a first step toward the def<strong>in</strong>ition of a “more environmentally-friendly”<br />

di<strong>et</strong>.<br />

For a def<strong>in</strong>ition of a susta<strong>in</strong>able di<strong>et</strong> (<strong>in</strong> terms of environmental impacts), it could be <strong>in</strong>terest<strong>in</strong>g to <strong>in</strong>vestigate<br />

other environmental impacts, such as water consumption or eutrophication, relevant issues for food<br />

products (ADEME AFNOR, 2011). However, these <strong>in</strong>dicators are still under development, as no consensual<br />

calculation m<strong>et</strong>hod has been established, and available results rema<strong>in</strong> hardly comparable.<br />

A further step address<strong>in</strong>g the nutritional value of the various consumption bask<strong>et</strong>s would help def<strong>in</strong><strong>in</strong>g<br />

b<strong>et</strong>ter consumption patterns for both human and our plan<strong>et</strong>’s health.<br />
