We considered four meat types dist<strong>in</strong>guished by the agricultural circuit from which they are obta<strong>in</strong>ed:<br />

Conventional agriculture: use of synth<strong>et</strong>ic fertilisers and pesticides for the production of feeds is<br />

allowed, as is the use of standard antibiotics for pigs;<br />

Label Rouge: approved production that conforms to specifications for the production of superior<br />

quality meat accord<strong>in</strong>g to a specific recipe;<br />

Organic farm<strong>in</strong>g: no synth<strong>et</strong>ic fertilisers or pesticides, strict restriction of the use of conventional<br />

v<strong>et</strong>er<strong>in</strong>ary medic<strong>in</strong>e;<br />

Bleu-Blanc-Cœur: pigs are fed a f<strong>in</strong>ish<strong>in</strong>g phase feed with traditional and high-Omega 3 plant<br />

sources (grass, l<strong>in</strong>seed, alfalfa, lup<strong>in</strong>, <strong>et</strong>c.).<br />

We considered also the follow<strong>in</strong>g 3 packag<strong>in</strong>g types:<br />

T<strong>in</strong> can;<br />

Alum<strong>in</strong>ium can;<br />

Glass jar with t<strong>in</strong> plate lid.<br />

2.3. Scope and functional unit<br />

S<strong>in</strong>ce the objective was to f<strong>in</strong>d hotspots throughout the supply cha<strong>in</strong>, we chose a Life Cycle Assessment<br />

(<strong>LCA</strong>) m<strong>et</strong>hodology. The life cycle considered for pâté production is shown <strong>in</strong> Figure 1. The scope of the<br />

study <strong>in</strong>cluded compl<strong>et</strong>e product life-cycle, from the production of raw materials <strong>in</strong> the agricultural phase<br />

(<strong>in</strong>clud<strong>in</strong>g the production of animal feed), all the raw material and f<strong>in</strong>ished product transport phases, the pâté<br />

production processes, consumption and end of life. The functional unit studied was a 78 g-equivalent pâté<br />

product eaten, with refrigeration for 24 hrs <strong>in</strong> the consumer's home <strong>in</strong>cluded for products <strong>in</strong> excess of 180 g.<br />

2.4. Software and data used<br />

The study was conducted by Bluehorse Associates <strong>in</strong> collaboration with Ecole Centrale Paris.<br />
