5. Conclusion<br />

Fresh water scarcity is a central issue debated at <strong>in</strong>ternational levels. It affects a grow<strong>in</strong>g number of people<br />

and companies worldwide. To support the def<strong>in</strong>ition of strategies to b<strong>et</strong>ter manage water resources the<br />

concept and the m<strong>et</strong>hodology of Water Footpr<strong>in</strong>t has been <strong>in</strong>troduced.<br />

<strong>Food</strong> and agriculture are recognized to be water <strong>in</strong>tensive sectors. Therefore many studies have been published<br />

to d<strong>et</strong>erm<strong>in</strong>e the water footpr<strong>in</strong>t of many food products. Most of these studies adopt life cycle perspective<br />

<strong>in</strong> the def<strong>in</strong>ition of processes to be considered <strong>in</strong> the water footpr<strong>in</strong>t quantification, but consider ancillary<br />

materials and processes (such as energy use or transportation) to be non-significant.<br />

In this study, conducted <strong>in</strong> 2011, a water footpr<strong>in</strong>t of a 330g organic strawberry jam is conducted. The<br />

m<strong>et</strong>hod used is the one presented by the Water Footpr<strong>in</strong>t N<strong>et</strong>work. The objectives of the study were:<br />

to compare the water footpr<strong>in</strong>t account<strong>in</strong>g of organic and non-organic strawberry farm<strong>in</strong>g <strong>in</strong> cultivated<br />

a site <strong>in</strong> Bulgaria;<br />

to assess the product water footpr<strong>in</strong>t of the 330g strawberry jam and to d<strong>et</strong>erm<strong>in</strong>e the contribution<br />

of ancillary materials and processes (overheads). Primary data were collected from the Italian<br />

<strong>Food</strong> company and its suppliers.<br />

Characterisation was performed us<strong>in</strong>g WSI.<br />

In this case study, results showed that organic strawberry farm<strong>in</strong>g has higher water use than non-organic<br />

strawberry farm<strong>in</strong>g. The ma<strong>in</strong> reason is the different yield of the two farm<strong>in</strong>g m<strong>et</strong>hod.<br />

The water footpr<strong>in</strong>t of the 330g organic strawberry jam resulted to be 88.4 l. Other studies confirm that<br />

farm<strong>in</strong>g is the process with higher water footpr<strong>in</strong>t. Overheads water footpr<strong>in</strong>t contribution resulted to be over<br />

10%. The Italian <strong>Food</strong> company should work ma<strong>in</strong>ly on paper based packag<strong>in</strong>g to reduce the water footpr<strong>in</strong>t<br />

of overheads. These results suggest that even ancillary materials and processes should be considered when<br />

look<strong>in</strong>g at strategies to reduce a product water footpr<strong>in</strong>t.<br />
