Second, we did not observe an effect of sensory training<br />
on the organization of the system of categorization.<br />
Compared to previous studies with wine experts, it can<br />
suggest that there is a difference between professional<br />
expertise and sensory expertise. The technical know<strong>le</strong>dge<br />
professional experts have in addition to chemosensory<br />
know<strong>le</strong>dge could have a great influence on their perceptions.<br />
Moreover, the difference of training approach<br />
between professional experts and sensory assessors could<br />
explain that professionals <strong>de</strong>velop common mental representations<br />
of products that differentiate them from novices<br />
in a categorization task.<br />
