The calculations for some common liquids are given in Table 13.1.6 ordered according<br />

to decreasing S ex. An important result is the appreciable order produced by the hydrocarbon<br />

chain relative to polar groups and hydrogen-bonding effects. For instance, S ex would<br />

project for water the same degree <strong>of</strong> order as for undecane. In like terms, ethanol is comparable<br />

to tridecane. However, the same magnitude <strong>of</strong> the excess entropy does by no means<br />

imply that ordering is similar. Much <strong>of</strong> the orientational ordering in liquids composed <strong>of</strong><br />

elongated molecules is a consequence <strong>of</strong> efficient packing such as the intertwining <strong>of</strong><br />

chains. In contrast, the structure <strong>of</strong> water is largely determined by strong electrostatic interactions<br />

leading to sharply-defined directional correlations characteristic <strong>of</strong> H-bonding. Although<br />

contrary to chemical tradition, there are other indications that the longer-chain<br />

hydrocarbon liquids are to be classified as highly structured as judged from
