7 Summary
Vacuum-packed fish products showed higher bacteria counts than non-vacuum-
packed fish products for the parameters total aerobic bacterial count at 25°C
(3.99 ± 1.72 CfU/g) and at 30°C (4.06 ± 1.73 CfU/g) and for Pseudomonas
(1.82 ± 1.28 CfU/g).
A categorisation of the sampled companies using the ascertained investigation
results has been applied for categorizing aquaculture establishments according to
their hygienic conditions. Besides, a 5 hygiene-categorisation steps were defined
which showed clear differences to their appoximate values given in the literature
which referred, nevertheless, primarily to the red meat area.
Concerning the microbes spectrum a sampling protocol should contain the
investigation total aerobic plate count at 30°C, Pseudomonas (quantitatively) as well
as Listeria spp. and Listeria monocytgenes (quantitatively and qualitatively) for the
routine control of hygienic condition after succeeded cleaning and disinfection
programmes of fish-processing companies.
The investigations on Enterobacteriaceae proved no important statement to the
hygiene status of fish-processing companies for this project.
The sampling protocol used in this study proved to be a practical and efficient
scheme for sanitary inspections.
