Antioxidant activity<br />

Unfavourable balance between free radical generation and<br />

antioxidant defences leads to oxidative damage<br />

Free radicals are formed endogenously as a result <strong>of</strong> normal<br />

oxidative metabolic reactions; exogenously as components <strong>of</strong><br />

tobacco smoke, diet, drugs, and other environmental pollutants;<br />

and <strong>in</strong>directly through metabolism <strong>of</strong> certa<strong>in</strong> solvents and by<br />

radiation<br />

If not quenched by antioxidants, these free radicals alter the<br />

structure and function <strong>of</strong> several cellular components, such as lipidconta<strong>in</strong><strong>in</strong>g<br />

cell membranes, lipoprote<strong>in</strong>s, prote<strong>in</strong>s, carbohydrates,<br />

RNA, and DNA<br />

It leads to cardiovascular disease, cancer <strong>in</strong>itiation, cataract<br />

formation, the ag<strong>in</strong>g process, <strong>in</strong>flammatory diseases, and a variety<br />

<strong>of</strong> neurologic disorders<br />

Theantioxidantdefense system prevent radical formation, remove<br />

radicals before damage can occur, repair oxidative damage,<br />

elim<strong>in</strong>ate damaged molecules, and prevent mutations.<br />

Fruits and vegetables are significant sources <strong>of</strong> the antioxidant<br />

enzymes (metalloenzymes)<br />

the antioxidant vitam<strong>in</strong>s C and E and b-carotene and flavonoids<br />

decrease plasma lipid peroxide concentration.<br />

isothiocyanates, and allyl sulphides may modulate <strong>of</strong> the CYP<br />

monooxygenases (which catalyze oxidation, hydroxylation, and<br />

reduction reactions—convert hydrophobic compounds to reactive<br />

electrophiles <strong>in</strong> preparation for their reaction with water-soluble<br />

moieties to improve excretion)<br />

Nutrients and other constituents <strong>of</strong> fruit and vegetables can affect<br />

almost all aspects <strong>of</strong> the immune system<br />

Nutrients and phytochemicals tend to affect Natural killer (NK) cells<br />

activity without <strong>in</strong>fluenc<strong>in</strong>g cell number which is a component <strong>of</strong><br />

the antitumor host defenses dur<strong>in</strong>g tumor growth and metastasis<br />

Supplementation with vitam<strong>in</strong>s C and E results <strong>in</strong> a transient<br />

<strong>in</strong>crease <strong>in</strong> cytok<strong>in</strong>e production<br />
