Chocolate Amazons (Schokoladen Amazonen)<br />

1 Servings<br />

2 egg whites<br />

1/2 c sugar (scant)<br />

1 3/4 c finely ground,unblanched<br />

1 almonds<br />

1 bar (or square semisweet)<br />

1 chocolate,grated<br />

1 blanched almonds,split in<br />

1 half (for garnish)<br />

Beat egg whites until very stiff. Fold in sugar. Combine. Add<br />

ground almonds and grated chocolate and blend gently but thoroughly.<br />

Drop a teaspoon of mixture onto a well-buttered 10 x 16 x 2 inch<br />

baking pan, forming a small mound with the help of a second spoon.<br />

It is essential to keep mound high. Decorate by placing one blanched<br />

almond half on top of each dome.<br />

Place in preheated oven, 300 degrees, reduce to 250 degrees, and<br />

bake for about 25 minutes until firm on surface. Leave on baking pan<br />

until slightly cool. Remove. Cookies may be slightly soft, but they will<br />

harden during cooling time. 18 to 20 cookies.
