the pot. Add the apple juice and then the apple sauce. Stir & cook for<br />

2-3 minutes then add the stock, the other spice portion. Cook while<br />

stirring for 12 minutes. Remove and either rice the mixture or puree it<br />

in a blander until it is smooth. Return to the pot, add the<br />

2 cups of diced potatos, bring to a boil, reduce heat to Low, stir well,<br />

cover and cook for 15 minutes. Add more stock if more liquid is<br />

need. Blend in the cream mixture and continue to cook stirring as you<br />

do for 3-4 minutes.<br />

Georgian Spitted Chicken With Plum Sauce<br />

Servings<br />

broiler,2 1/2 lbs ea<br />

salt,to taste<br />

1 pepper,to taste<br />

butter<br />

1/2 c plums,cooked & pureed<br />

garlic clove,crushed<br />

T coriander,fresh,chopped<br />

1/8 t red pepper<br />

GARNISHES ======================<br />

1 tomato,Slices<br />

1 cucumber,Slices<br />

Wash chickens and wipe dry. Season with salt and pepper. Arrange,<br />

skin side down, on a grill or broiler rack. Brush well with butter. Put in<br />

a preheated broiler and cook under medium heat for 50 to 60 mins or<br />

until tender, brushing occasionally with butter. Turn a few times<br />

during cooking. While chicken is cooking, combine plums, garlic,<br />

coriander or parsley and red pepper in a sauce pan; season<br />

with salt and pepper. Cook on the stove long enough to heat through.<br />

To serve, arrange chicken on a platter and garnish with tomatoes and<br />

cucumbers. Serve sauce separately to pour over chicken.
