Potato Kugel<br />

6 Servings<br />

9 potatoes,grated<br />

egg,beaten<br />

sl bacon<br />

T (heaping) sour cream<br />

1/2 onion,chopped<br />

1 ds salt<br />

1 c milk,boiled<br />

1 ds pepper<br />

Put potatoes into colander and press out juices. Cook bacon and<br />

keep the fat. (Vegetarians omit meat.) Combine potatoes, bacon,<br />

onion and hot bacon fat, and pour into a 9 x 13-inch baking dish. Pour<br />

milk over top. Pour on egg and sour cream. Salt and pepper to taste.<br />

Bake at 350 F for 1 hour or until light brown on top. Serve<br />

immediately or let flavors blend overnight.
