2 green bell peppers<br />

washed,seeded, and cut into<br />

3 tomatoes<br />

washed and cut into,1" Cubes<br />

2 stalks celery<br />

washed & diagonally,Sliced<br />

-into 1/2<br />

1/4 lb feta cheese,cut into 1/2"<br />

-cubes<br />

1/2 red onion,diced<br />

1/2 t kosher salt<br />

pepper,Freshly Ground<br />

3 T vinegar<br />

1/4 c oil<br />

1/2 t oregano<br />

1 T fresh basil,minced<br />

In a 2-quart bowl, mix peppers, cucumber, tomatoes, celery, feta<br />

cheese, and red onion. Season with salt, pepper, vinegar, oil,<br />

oregano, and basil.
