High Rise German Pancakes<br />

1 Servings<br />

3 eggs<br />

1/2 c milk<br />

1/2 c flour<br />

1/2 t salt<br />

1 pn cinnamon<br />

1 pn nutmeg<br />

1 1/2 T sugar<br />

4 T butter,2 of them melted<br />

2 tbps icing sugar<br />

1 whipped cream (garnish)<br />

1 fresh berries (garnish)<br />

Preheat oven to 425F. Beat together the egg and milk. Sift together<br />

the flour, salt, sugar and spices. Whisk into the egg/milk mixture<br />

and then beat in 2 tbps melted butter. Using a nonstick oven proof<br />

skillet, melt remaining 2 tbsp butter. Pour batter into hot skillet<br />

and put in oven. Bake for about 15 minutes, then reduce the heat to<br />

375F and continue to bake for another 5-6 minutes until the sides<br />

are golden and the center is 'set'. Place pancake onto heated plate.<br />

Sprinkle icing sugar over top. For special effects, place paper<br />

doilie on pancake, sprinkle sifted icing sugar over and then<br />

carefully remove doily. Garnish with whipped cream and serve<br />

with fresh berries if desired
