1 pk active dry yeast,or<br />

1 T active dry yeast,bulk<br />

1/4 c warm water,(110ø-115øf)<br />

1/2 c sugar<br />

1 t salt<br />

1/3 c butter (or regular<br />

-margarine)<br />

1 T orange juice<br />

2 t rum extract<br />

1 c milk,scalded<br />

1 unbleached flour *<br />

2 lg eggs,well beaten<br />

1 fat for deep frying **<br />

1 jam (or jelly)<br />

* Use up to 4 cups of unbleached flour in this recipe. ** Heat the<br />

fat to 375F for frying the doughnuts.
