you are using apples or damson plums, dust fruit with cinnamon and<br />

sugar, otherwise just with sugar. Fold the dough over to enclose the<br />

fruit and arrange the dumplings in a baking dish with a buttered<br />

bottom (3 1/2 Tbsp butter per dumpling) . Bake at medium heat for 35<br />

to 40 minutes, until light brown. Remove from oven and tip onto a<br />

board for cooling. Brush with melted butter shortly before cooling.<br />

Serves 4.<br />

Pfeffernuesse (Pepper Nut Cookies)<br />

6 Servings<br />

3 c flour,sifted<br />

1 t baking powder<br />

1/4 t salt<br />

1/2 t cinnamon<br />

1/4 t allspice<br />

1/4 t cloves (done by hand,Ground<br />

- if pos,s, for stronger ta<br />

1/4 t nutmeg (yuch!,grandma<br />

-always forgo,t to add it)<br />

1/4 t mace<br />

3 eggs,beaten light<br />

3/4 c sugar<br />

1 juice and rind 1,Grated -<br />

lemon<br />

2/3 c nuts,Chopped<br />

Measure flour and sift with baking powder, salt, and spices. Add sugar<br />

slowly to beaten eggs and stir in lemon juice and grated lemon rind.<br />

Add dry ingredients and nuts and mix well. Refrigerate 2 hours. Roll out<br />

1/2" thick and cut with tiny cutter 3/4" round. Let cookies stand over<br />

night in cool place on ungreased cookie sheet. Just before baking, put a<br />

drop of brandy on each cookie. Bake brandy side up<br />

[don'tcha just love it?] in 300 deg F oven for 1/2 hour. Cool thoroughly<br />

and place in tightly covered jar.
