1 cut up chicken,dredged in<br />

-flour<br />

1/4 lb bacon,minced<br />

1 md onion,chopped<br />

1 md carrot,sliced thinly<br />

1 clove garlic,peeled and -<br />

minced<br />

1/2 lb mushrooms,sliced<br />

1 bay leaf<br />

1/2 t thyme Salt,to<br />

taste Pepper,to<br />

taste<br />

1 T marjoram<br />

1 1/2 c dry red wine,(or to taste)<br />

ds Kitchen Bouquet<br />

In a heavy, deep skillet or dutch oven, cook bacon until firm.<br />

Retaining bacon fat, add all vegetables except mushrooms and cook<br />

until browned. Add mushrooms and cook until limp. Remove<br />

vegetables, set aside, and brown chicken pieces in remaining fat. Add<br />

red wine and herbs and reserved vegetables. Simmer, covered for 45<br />

minutes to an hour, turning once. Just before serving add Kitchen<br />

Bouquet.<br />
