Simmer the mixture for 5 minutes, stirring occasionally. Adjust seasonings.<br />

Transfer cabbage-tomato sauce mixture to a large baking dish. Arrange the<br />

cabbage rolls close together in one layer on the sauce. Spoon some of the<br />

mixture over the rolls. Bake at 325 degrees F for 1 1/2 hours. Baste rolls 4 to<br />

5 times during cooking. Let the dish cool. Cover and refrigerate overnight.<br />

Remove cheesecloth. Heat in preheated 350 degree oven for 30 minutes<br />

before serving.<br />

Gefullte Kalbsbrust (Stuffed Veal Breast)<br />

4 Servings<br />

1/2 lb ground beef,lean<br />

1/4 lb pork,Ground<br />

1 egg,large<br />

1 c bread crumbs,soft<br />

1 T lemon juice<br />

1/8 t nutmeg<br />

1/2 t salt<br />

1 pepper,to taste<br />

4 lb breast of veal,with brisket<br />

3 T shortening<br />

2 t paprika<br />

2 bay leaves<br />

6 cloves,whole<br />

1/2 t rosemary<br />

1/2 t basil<br />

2 c water<br />

Mix ground meats, egg, bread crumbs, lemon juice, netmeg, salt, and<br />

pepper for stuffing. Stuff pocket of veal breast. Sew closed or use<br />

toothpicks or skewers. Brown roast in melted shortening in ovenproof<br />

casserole. To the drippings add paprika, bay leaves, cloves,<br />

rosemary, basil, and 2 cups water. Bake in a covered casserole at 325<br />

degrees F for 2 hours or until veal is tender. Slice veal and serve<br />

immediately.
