Vegetable Medley (Leipziger Allerlei)<br />

1 Servings<br />

1 c cut green beans<br />

1 c peas (or lima beans)<br />

1 c carrots,Sliced<br />

1/2 head cauliflower,cut into<br />

1 flowerets<br />

1 water,Boiling<br />

1/2 c mushrooms,sliced<br />

2 T butter<br />

2 T flour<br />

1 c hot milk<br />

2 egg yolks,beaten<br />

1/4 t salt<br />

1/4 t black pepper<br />

Cook vegetables except mushrooms in small amount of boiling salted<br />

water for 35 minutes (use 1/2 teaspoon salt per quart of water). Drain.<br />

Saute mushrooms in butter. Blend in flour. Brown. Add milk. Cook,<br />

stirring, until thickened. Add a little of hot sauce to egg<br />

yolks. Return egg yolks to remaining sauce. cook. Stirring for 1<br />

minute. Add seasonings. Combine vegetables and sauce. Mix .<br />

serves 8
