RICE MIXTURE<br />

1/4 c onions,Chopped<br />

1 T oil<br />

1 c mushrooms,Minced<br />

2 c rice,Cooked<br />

3 T celery,Minced<br />

2 T green bell pepper,Minced<br />

1 T carrots,Grated<br />

1/2 c cheddar cheese (or other)<br />

-cheese<br />

1 T fresh parsley,Minced<br />

or 1 teaspoon thyme,Dried<br />

-(optional)<br />

1 t paprika<br />

1/2 t salt<br />

1/4 t black pepper<br />

or pinch cayenne pepper<br />

-(optional)<br />

2 t lemon juice<br />

1 egg<br />

ROLLING MIXTURE<br />

2 c fresh bread crumbs<br />

2 eggs<br />

oil for frying<br />

White Sauce,(see recipe)<br />

Saut onions and mushrooms in oil until onions are light golden and<br />

translucent. Combine all ingredients except rolling mixture. Chill rice<br />

mixture. Beat the eggs from the rolling mixture and roll croquettes<br />

in beaten egg and then breadcrumbs. Fry, turning so all sides brown.<br />

Serve with White Sauce . Or make White Sauce into Brown Sauce, or<br />

use recipe for Roasted Tomato Sauce.<br />
