These two stores are named for their joint owners, both expert chefs who have decided to<br />

invest their professional skills in them. The historic place in Via Monferrato is a delicates-<br />

sen, while the one in Via Tonello specializes in pasta. Only select primary ingredients are used<br />

to create an appetizing range of dishes from the Piedmontese tradition: Russian salad and<br />

vitel tonné, anchovies in parsley and garlic sauce, and mini-frittatas, plus delicious aspics, the<br />

savory ones made the classic way using pigs’ trotters, the fruit ones flavored with lemons from<br />

Sorrento. The assortment of cured meats and cheese is exceptional. On the fresh pasta front,<br />

besides traditional Piedmontese agnolotti, they also make a magro version filled with cheese<br />

and asparagus or Ligurian artichokes, plus tajarin, orecchiette, typical of Puglia and trofie, typi-<br />

cal of Liguria, serving the latter with classic pesto homemade using only Pra’ basil. Another<br />

treat are the gnocchi made with Bindia-variety potatoes. Via Monferrato, closed Sunday and<br />

Wednesday afternoon. Via Tonello, closed Sunday and Monday morning.<br />
