he quality of this cellar’s wines has improved in the last few years and market demand is<br />

increasing sharply, so much so that reduced production in 2008 will create problems of<br />

allocation. One ongoing problem still has to be solved: the generational turnover of members<br />

and the slow but progressive abandonment of the vines. Here the difficulties involved in work-<br />

ing and accessing the vineyards cast a shadow over the magic of the unique landscape. Viviano<br />

Gassino, who has been successfully managing the cellar for ten years, says passion and hard<br />

work are the recipe for survival. This year the replacement of the barrels will be completed. This<br />

hefty investment will reap further benefits for the wines and will facilitate the work of Manlio<br />

Muggiano, the senior cellarman, and Maurizio Forgia, the enologist. The wines we most recom-<br />

mend are the regular Carema and the Carema Riserva, the Canavese Tournet, fruity on the nose<br />

and tangy in the mouth, and the Canavese Nebbiolo Parej, typical of the terroir.<br />
