BREAD SHOPS AND BAKERIES<br />

This small bread shop in the center of Gassino was renovated recently but the three<br />

steps that give it its name have stayed (scalini means steps in Italian). In the adjoin-<br />

ing bakery workshop Ignazio Mudu has specialized in the production of quality grissini:<br />

the types most in demand are fi ne, classic and fl avored rubatà, while the new specialties<br />

we recommend are milk and plain chocolate grissini and the fl atter stirati, baked with<br />

corn and sunfl ower fl our. The bread is also good but grissini are the specialty, so much so<br />

that on the third Sunday in May the village of Gassino dedicates a festival to them, which<br />

commences with their ritual baking in the old communal oven. Ignazio is one of the brains<br />

behind the event during which he describes to the public the refi ned production technique<br />

behind the grissini he sells in his shop every day.<br />

Closed Sunday and Wednesday afternoon.<br />
