The turnoff for the Pian della Pietra<br />

locality, for which the business, opened<br />

in 2001, is named, is just outside the village<br />

of Ala di Stura. Here a single building houses<br />

a barn, a processing and aging workshop and<br />

a shop. Renata Alpignano and Cinzia Loturco,<br />

longtime members of the Casari e casare<br />

dairy association, keep about 80 goats, mostly<br />

Saanen plus a few native Camosciata. Cheeses<br />

on offer range from very fresh (Ricotta, Tomini)<br />

to others at various stages of maturation, such<br />

as Tomino savoiardo, Rustichina, Cà du roc,<br />

Toma and , as of this year, Stracchinello. Be<br />

sure to taste the Maggiorino, named for the<br />

shepherd who handed down the original recipe,<br />

the Toma ricca, whose texture is similar to that<br />

of Castelmagno, Blu di capra and Chevrin delle<br />

valli di Lanzo. The dairy also sells fresh milk,<br />

yogurt and mousses.<br />

Open every day from 4.30pm to 7pm, and at<br />

weekends from 9am to 12 noon. The dairy’s<br />

produce is also on sale every Tuesday at the<br />

farmers’ market in Lanzo.<br />
