It was in 2007 that the Sparacio husband<br />

and wife team opened their Gilac brewery.<br />

Their past was only apparently removed from<br />

their new business. Salvatore, having worked as<br />

managing director in important multinationals,<br />

provided organizational skills and recipes.<br />

Claudia, on the other hand, was a biologist and<br />

took charge of productive aspects. Salvatore’s<br />

brother, Vincenzo, is a musician and he uses<br />

his creativity in the communications and<br />

marketing departments. “Beers for imbibing”<br />

— that could be the Gilac slogan. Meaning<br />

no fireworks, but the constant pursuit of non-<br />

banal simplicity and product characterization.<br />

Of all the beers on offer, we recommend<br />

Bionda (pale, made exclusively with organically<br />

certified primary ingredients) and Diva Gold<br />

(also pale, bottle-conditioned and perfected<br />

with the Mèthode Champenoise to produce<br />

spumante-like fizziness). The vast range also<br />

includes two amber beers, Alma and Sohpie,<br />

another three pale beers, Caesar, Diva and<br />

Dorita, and a white beer, Guenda, with delicate<br />

fruity, spicy notes. Closed Sunday.<br />
