or almost 30 years, Iva and Maurizio have been selling products made with top-quality,<br />

hand-processed primary ingredients. The pasta for the stuffed pasta is paper-thin<br />

and fillings reflect different regional traditions: the plin, agnolotti hand-pinched on one side,<br />

for example, are typical of Piedmont’s Langa hills, while the agnolotti Cavour conjure up the<br />

Turin of yesteryear. Then there are fillings with more innovative combinations: ricotta and<br />

citrus fruits; saffron and spinach; mint, potatoes and Pecorino; and goat’s cheese and Tropea<br />

onions. Fresh pasta ranges from garganelli to trofie, from orecchiette to pigi, from cavatelli<br />

to spatzli, from tajarin to maltagliati, to the busciati of Trapani to be served with so-called<br />

pesto trapanese, made with ground tomato, basil and almonds. Always available are hand-<br />

made gnocchi, traditional or made with pumpkin and chestnuts, as are typical Piedmontese<br />

delicacies, fish dishes, and caponata, stewed vegetables Sicilian-style. You’ll also find jars<br />

of seasonal fruit jams, meat sauce, bagna caoda, vegetables preserved in oil and fantastic<br />

homemade vegetable stock cubes. Closed Sunday and Monday.<br />
