WAFFLE SHOPS<br />

We used to often meet them at fairs and popular festivals, Erica and Marzia and<br />

their “traveling shop” serving humble old mountain dishes that you would<br />

normally eat only in people’s homes. Then the two friends decided to cater for a broader<br />

public confident that the goodness and authenticity of their cooking would be a hit. So<br />

now here they are turning out gofri, or waffles, made according to the traditional recipe<br />

whereby a batter of water, flour, milk, eggs, salt and brewer’s yeast is cooked with special<br />

irons into disks with a honeycomb surface impression. Crisp and soft at the same time,<br />

gofri are filled with cheese and cured meats or with jams and the like. Another of Enrica<br />

and Marzia’s specialties is cajette, typical of the Val Chisone, balls of grated potato mixed<br />

with bread, cheese, eggs, lardo, onion and garlic, which are boiled in water and drizzled<br />

with melted butter. Recently the two friends opened a gofreria in Via Savoia, in Pinerolo.<br />

So now we don’t have to wait for village festivals any more.<br />
