BUTCHERS’ SHOPS This butcher’s shop, a real jewel for gourmets in the old center of Santena, near Cavour’s castle, has been run by Secondino and Caterina Crivello with professional skill and love for 37 years. The couple have their own abattoir, authorized by the EEC for slaughtering for retail sale, and they work expertly with certified Piedmontese fassone veal selected on the best local farms. On the counter you’ll find all the classic cuts plus superb cured meats, such as raw salami, various types of sausage and oven-baked frankfurters. Also on sale are gastronomic specialties, in jars or vacuum-packed and, as of recently, excellent agnolotti filled with classic Piedmontese braised beef. Closed Monday, Wednesday and Thursday afternoon. 209

Piercarlo prosegue l’attività di famiglia, scegliendo i bovini presso piccoli allevatori di fiducia del Cuneese e offrendo prodotti di prima qualità, garantita dalle modalità di allevamento e dalla tracciabilità della provenienza. I tagli sono esposti con cura e valorizzati dalla disponibilità a fornire consigli su come trattarli in cucina. Si possono inoltre trovare la trippa di Moncalieri, la salciccia di bovino, la carne di polli e conigli allevati con tempi di crescita adeguati. Con la stessa cura sono selezionati i salumi, come il deli- zioso salame cotto, e alcuni formaggi. Nel reparto gastronomia troverete alcuni clas- sici piemontesi come le acciughe al verde o macerate nel limone, l’immancabile se- molino, peperoni e funghi sott’olio. Infine una piccola selezione di vini piemontesi e di oli, agnolotti e qualche tipologia di pasta secca. Chiuso domenica e giovedì pomeriggio.
