ausa Café is a cooperative that offers
a chance for social and professional
rehabilitation to inmates at the “Lorusso e
Cotugno” prison in Turin, where a coffee
toasting plant has been installed (likewise,
in Saluzzo prison they have begun to pro-
duce quality craft beers and in Saluzzo pris-
on they have started up an agroecological
farm). The now “historic” Huehuetenango
coffee from Guatelmala, a Slow Food Pre-
sidium, was recently joined by a new blend,
Terre Alte, made with Camapara Mountain-
coffee, also a Slow Food Presidium, from
Honduras, where producers follow the cen-
turies-old tradition of cultivating their cof-
fee at high altitudes in the shade of native
trees and selling it a fair prices without go-
ing through middlemen. This new blend is
distributed by the Vergnano coffee company
in bars and restaurants and is also on sell
at Eataly stores. The Bistro di Pausa Café,
where it is possible to taste all the coop-
erative’s products, was recently opened in
Grugliasco at Corso Torino 78.
