ausa Café is a cooperative that offers<br />

a chance for social and professional<br />

rehabilitation to inmates at the “Lorusso e<br />

Cotugno” prison in Turin, where a coffee<br />

toasting plant has been installed (likewise,<br />

in Saluzzo prison they have begun to pro-<br />

duce quality craft beers and in Saluzzo pris-<br />

on they have started up an agroecological<br />

farm). The now “historic” Huehuetenango<br />

coffee from Guatelmala, a Slow Food Pre-<br />

sidium, was recently joined by a new blend,<br />

Terre Alte, made with Camapara Mountain-<br />

coffee, also a Slow Food Presidium, from<br />

Honduras, where producers follow the cen-<br />

turies-old tradition of cultivating their cof-<br />

fee at high altitudes in the shade of native<br />

trees and selling it a fair prices without go-<br />

ing through middlemen. This new blend is<br />

distributed by the Vergnano coffee company<br />

in bars and restaurants and is also on sell<br />

at Eataly stores. The Bistro di Pausa Café,<br />

where it is possible to taste all the coop-<br />

erative’s products, was recently opened in<br />

Grugliasco at Corso Torino 78.<br />
