BUTCHERS’ SHOPS Near the market in the Santa Rita, the Barberis butcher’s shop carries on a tradition while, at the same time, expanding its product range. Piercarlo runs the family business, choosing cows on small trusted farms in the province of Cuneo, and selling guaranteed prime quality, traceable meat. Cuts are expertly displayed and customers are provided with advice on how to cook them. The shop also sells trippa di Moncalieri, cold, sliced tripe, veal sausage and suitably aged chicken and rabbit. Cured meats and cheeses are also on sale, all chosen with care and attention. In the shop’s delicatessen section, you will also find Piedmontese classics such as anchovies in parsley and garlic sauce and macerated in lemon juice, baked semolina and peppers and mushrooms preserved in oil, as well as a small assortment of Piedmontese wines, oils, agnolotti and dried pasta. È il caso di questa piccola macelleria, due vetrine af- facciate su via Principi d’Acaja, a un passo da piazza Benefi ca. La costanza, d’altronde, Bruno l’ha ereditata dal padre, macellaio come lui, e non esita a defi nirsi “macellaio di tradizione”. I tagli proposti, per la maggior parte di femmine di fassone piemontese, sono dai più classici ai più complessi e vengono valorizzati dalla competenza del titolare nel consigliare i più adatti alle diverse esigenze. Inoltre pollame, conigli e carni suine, proposti sia nei tagli da cucinare sia in rolata. La scelta tra le preparazioni pronte da cuocere è piuttosto ampia e spazia dagli spiedini alle polpette, dai saltimbocca alle cotolette impanate. In inverno non manca il bue grasso di Carrù. Accanto al bancone delle carni, salumi selezionati da validi marchi, mentre sugli scaffali c’è una bella esposizione di oli, affumicati di pesce e conserve per completare l’offerta. Chiuso giovedì pomeriggio e domenica.
