BREAD SHOPS AND BAKERIES
As a kid Mauro used to help his uncle in his workshop in the village of Forno Canavese.
But once he had set up his own business, he felt the need for more room to work
in, hence the new premises in Salassa. His hand-stretched, flour-free, four-and-water grissini
stay friable for a long time and his range of products is very varied, increasingly oriented
towards the use of organic prime ingredients. His grissini come flavored with onion, sesame,
corn, olives, chili pepper, mint and chocolate. Mauro also dabbles with confectionery, hence
crumbly baci di dama (ladies’ kisses) biscuits, corn biscuits made solely of corn flour and
butter, Torcetti di Lanzo and Torcetti del Canavese (grissini bent to form drop shapes and
lightly caramelized in the oven) and galettes for dipping in tea or coffee. All products are on
sale in select points of sale in Turin and its province. If you decide to venture out to the shop
in Salassa, you’ll also find an assortment of fine wines, cheeses and typical produce of the
Canavese district. Open from Monday to Saturday from 6am to 9pm.
