alter Villata’s family farm breeds<br />

dairy cattle and works the land to<br />

produce selected hay for their byres. The<br />

resulting short-supply chain ensures the<br />

quality of the end-products, cheeses of<br />

many typologies, mostly Piedmontese. From<br />

April to October, the herds graze on the<br />

farm’s land. The milk of the Brune Alpine<br />

and Pezzata Rossa cows is used to make<br />

Ricotta, Primosale, Stracchino, Robiola,<br />

various types of Tomini, Toma, blue cheeses<br />

sweet and sharp and Taleggio (known here<br />

as Ticinello). Their product catalogue also<br />

includes bottled raw milk, fruit-flavored<br />

yogurt and cream desserts.<br />

Produce may be bought directly at the farm<br />

shop, open to the public from Thursday<br />

to Saturday, or at the markets in Chieri,<br />

Carmagnola and Poirino (the closest to<br />

Pralormo), or further afield in San Damiano<br />

and Monticello d’Alba.<br />
