her typical 17th-century farmhouse, Maria Condo will show you round her<br />

apiary and the workshops where she makes honey and by-products of bee-<br />

keeping such as wax. The family business was formed in 1982 and now boasts over 220<br />

hives, producing about 70 quintals of honey a year. A 100-seater hall serves for teaching<br />

activities, such as food education courses in which school parties find out about the life<br />

cycle of bees and are treated to practical demonstrations on how honey is extracted from<br />

honeycombs using separators. Condo’s many honey varieties (100% natural and additive-<br />

and preservative-free) include acacia, honeydew, chestnut, cherry, rape, lime, dandelion<br />

and multifloral.<br />

The shop is open to the public by telephone reservation. The farm’s products are also on<br />

sale at the markets of San Mauro (Friday from 8am to 12 noon) and Settimo (Tuesday from<br />

8am to 12 noon).<br />
