« T here’s WINE GROWERS nothing that ties you to the land more than owning vines.” So says Sergio who, helped by his wife, has decided to gamble on buying up vine- yards to give this historic Mazzé winery a complete overhaul. He currently cul- tivates ten hectares of land with special care and respect for the environment, producing about 75,000 bottles a year. His main wines are: Erbaluce di Caluso Ypa DOC (a cru that expresses the variety’s qualities well), Erbaluce Spumante Rigore (Metodo Classico Brut), Caluso Passito Dus and Canavese Rosso Rox. One of the winery’s biggest gambles and, at once, the feather in its cap is its Erbaluce di Caluso Essenthia which, thanks to stabilization techniques to avoid filtration, release unique aromas. It is possible to visit the cellar to discover its perfect mar- riage of tradition and innovation firsthand. 343

Con la stessa dedizione applicata alle proprie colture ortofrutticole si fanno carico delle numerose parcelle, di cui alcune coltivate a syrah da cloni rodaneschi di Crozes-Hermitage. A Piverone, sulla Serra, il paesaggio è incantevo- le: il vicino lago di Viverone fa da regolatore termico e i boschi sono il contraltare selvag- gio alla presenza dell’uomo. Per l’erbaluce l’azienda predilige la tradizionale e collaudata pergola, mentre per gli altri vitigni la classica controspalliera a guyot. In vigna domina il buonsenso, in cantina la voglia di crescere. Segnaliamo l’Erbalu- ce di Caluso nella selezione 13 mesi e nell’etichetta Le Chiusu- re, un bianco intenso, fruttato e floreale. Tra i rossi, invece, il Basy, l’F2, il Rossomeraviglia e, ancora, il Rosa che Rosa non Sei, a base di nebbiolo e syrah.
