where Stefano Poretti makes his<br />

specialties, you’ll find a vast range of pralines<br />

and chocolates, plus fun creations shaped like<br />

utensils, animals and famous people, all fruit<br />

of the imagination of this master chocolatier.<br />

Besides being an expert sculptor (you can<br />

see some of his award-winning works on his<br />

website), he is above all a craftsman attentive<br />

to the provenance and quality of his primary<br />

ingredients. Hence, in partnership with<br />

other small craft workshops, he is currently<br />

developing a short supply chain project with<br />

micro-producers in South Africa. Try the filled<br />

chocolates, pralines, truffles, cremini — with<br />

redcurrants, flavored with spices, with white<br />

chocolate and crushed cocoa beans, with<br />

mountain mint — or the chocolate bars,<br />

some studded with dried fruit, with different<br />

percentages of cocoa mass and crus from<br />

various regions. One new creation is a hand-<br />

made gianduiotto chocolate of rare lightness<br />

and freshness.<br />
