T hough they still had previous experience in the sector under their belts, Elena and Silvana were still youngsters when, in 1998 , they decided to go into business on their own and open Elsy in Turin’s Crocetta neighborhood. Now they have two workshops: one dedicated to confectionery in Via Giovanni da Verrazzano, the other, given over to chocolate, in Corso Ca- sale, — though their full product range can be found at both. The praline assortment is mind- boggling, in more ways than one since Elena is a stickler for artistic appearance. Hence be- sides classic eggs and fun puppets, you’ll also find veritable works of art here: from decorated boxes to “choc-jewelry”, from clothes to shoes, and even “Circelsy” chocolate pictures that reproduce the works of painter and sculptor Michele Circiello. Based on years of experience, the philosophy behind the confectionery is mignon, hence petite patisserie, dainty bis- cuits, puff-pastry savories and canapés, tiny mini-cakes and amandines, a line of delicious almond paste creations. A partire dalla Torta Sabauda, nata da un’attenta ricer- ca sui ricettari di famiglia e su quelli più antichi dei pasticcieri di corte, che coniuga nocciola tonda e gen- tile delle Langhe, cacao amaro, burro vaccino e gian- duia. E poi col Sabaudo, le palle di Pietro Micca o la Torta dell’assedio, elaborata con zucchero e albume. Oltre alle rievocazioni, però, c’è molto altro, tanto alla voce pasticceria quanto a quella cioccolateria. Per la prima, ci sono bignole assortite, torte, biscotti secchi da tè, croissant burrosi e molte altre golosità per la colazione. Nell’ambito cioccolato, l’ultra-contemporanea linea Lagrange 34, nata dalla collaborazione con un istituto di design, le creme, i cucchiaini di cioccolato fondente, i cucumoni o le altre bellissime “sculture” – siano esse uova pasquali o abeti natalizi – per le festività. Poi le gelatine assortite, gli arancini, i kikingeri e i semifreddi (anche in monoporzione) alle creme o alla frutta. Curiosando in vetrina, troverete anche la pasta al cioccolato, da provare con la salsa di noci. Chiuso domenica pomeriggio e lunedì.
