Just listen to the stuff they sell: La Granda<br />

Piedmontese beef and veal (Slow Food Presidium),<br />

Sambucano lamb (Presidium), Carmagnola gray<br />

rabbit (Presidium), Saluzzo white hen and Pied-<br />

montese blonde hen (both Presidia), pork from<br />

pigs in the Cuneo valleys… Plus, you’ll also find<br />

every cut of meat imaginable, especially from heif-<br />

ers and oxen (the best), some of which consid-<br />

ered less noble — unjustly so, according to Paolo,<br />

who’ll tell you how to use them — but all equally<br />

delicious. Then comes a host of specialties, such<br />

as “il mio prosciutto”, a boiled ham prepared by<br />

Paolo that makes your mouth water only looking<br />

at it, homemade wurstel, or frankfurters — classic<br />

pork and chicken too — chicken ham with herbs,<br />

Bra sausage (Paolo is specially authorized to make<br />

it in-house) and so on. Then there are the delica-<br />

cies made by Nadia: they include pâtés, terrines,<br />

meatballs and meat loaves and boiled and braised<br />

veal and beef. Last but not least, the shop sells a<br />

whole range of select food products, from wine to<br />

pasta and much more besides.<br />
