WINE GROWERS I n the Caretto family farm, active since the 19th century, they are still producing wines that mirror local tradition and terroir with great professional rigor. Almost as a token of the family’s dogged application to their task, in 2004 father Domenico handed over the running of the enterprise to his son Loris. The farm is situated in San Giorgio Canavese, where the Carettos try to give their wines the right blend of tradition and innovation to produce rich flavor without straying from local authenticity. Their standout bottles are still Erbaluce and Erbaluce Passito, as well as Canavese Rosso. Here wine production is backed up by cereals (old Piedmontese corn) and honey, which is why the owners like to see their farm as an “all-round” enterprise. By reservation is possible to visit the farm, taste the wines and follow learning trails. 347

Gian Luigi, l’attuale proprieta- rio, non ha nessuna intenzione di cambiare questa macchina affiatata, ma continua a sperimentare per tenere questa gemma autoctona sempre al passo con i tempi. Lo affianca il padre Francesco, uno dei pionieri della spumantizzazione dell’erbaluce. I vari appezzamenti sono dislocati nei comuni di San Giorgio Canavese sulla collina storica di Caluso; i terreni di origine morenica, sab- biosi, a pH acido spiegano la sapidità nei vini. L’erbaluce è allevato nella maggior parte sulla classica pergola ma la ricerca è dedicata a cloni di maggior fertilità basale per renderlo adatto alla spalliera e potature a guyot. La gamma naturalmente è incen- trata sull’erbaluce, vitigno versatile declinato in va- rie tipologie, tra cui l’Erbaluce di Caluso, l’Erbaluce di Caluso La Rustìa, il Caluso Spumante Brut M.Cl. Cuvée Tradizione o le versioni passite Caluso Passi- to Sulè 2006 e Caluso Passito Ambra.
