Elena and Giovanni Scalenghe belong to the third generation of the family that has<br />

been running this cake shop-cafeteria on the main street in Trofarello since its open-<br />

ing in1954. Today it prides itself on its excellent, exceptionally soft nougats, the main<br />

ingredient of which is the tonda gentile hazelnut of the Langhe hills. Variants range from<br />

the classic version to those coated with plain chocolate and with Bronte pistachios or Noto<br />

almonds. When you open the original jars of individual nougat candies, they release a deli-<br />

cious aroma of vanilla and (organic) honey. The store window display features classic Mon-<br />

te Bianco cakes and, in summer, Monte Rosa, a variation on the theme with sour cherries.<br />

A candied local variety of the latter is also used to fill Kranz, small cakes made with puff<br />

and brioche pastry. Hazelnut, fruit, sandwich and ceremonial cakes are also available. A<br />

special department is given over to chocolate, including assorted pralines and gianduiotti.<br />

Closed Monday.<br />
