his old winery is an institution in the Canavese district. Since 1895, the Orsolani family has<br />

been growing erbaluce, the main grape in these hills. The present owner, Gian Luigi, has no<br />

intention of making any adjustments to this well-oiled machine, but he doescarry on experiments<br />

to keep this native gem in step with the times. He is helped in his work by his father Francesco,<br />

one of the pioneers of the “spumantization” of erbaluce. The vineyards are spread out across the<br />

communes of San Giorgio Canavese on the traditional winegrowing hill of Caluso. The sandy soil is<br />

of morainal origin with an acid pH, which explains why the wines are so full of flavor. Most of the<br />

erbaluce is trained using the classic pergola system, but research is being carried out to on clones<br />

with greater basal fertility to adapt the grape to upward guyot training and pruning. The wine<br />

range is, of course, based on erbaluce, a versatile grape that comes in various typologies: Erbaluce<br />

di Caluso, Erbaluce di Caluso La Rustìa and Caluso Spumante Brut M.Cl. Cuvée Tradizione, plus the<br />

“passito” versions Caluso Passito Sulè 2006 and Caluso Passito Ambra.<br />
