carried out through species-specific markers on conventional<br />

polymerase chain reaction (PCR). Work is ongoing on the Real-time<br />

PCR to develop a multiplex assay that can discriminate individual<br />

strains <strong>of</strong> Listeria along with an in-house positive control at<br />

Waterford Institute <strong>of</strong> Technology.<br />

Key Findings<br />

Preliminary analysis <strong>of</strong> this collection indicated that forty percent <strong>of</strong><br />

the strains possibly were Listeria monocytogenes and the CVRL is<br />

currently conducting a survey <strong>of</strong> food processing environments at<br />

RTE food suppliers regulated by DAF.<br />

Conclusion<br />

The bacterium L. monocytogenes and listeriosis have grave<br />

implications for consumer, the food manufacturer and the food<br />

industry, rapid but accurate molecular techniques hold the key to<br />

preventing the entry <strong>of</strong> this hazardous pathogen into the food chain.<br />
