LE TACCA OU PI A. 261 C'est à la fin de la première année qu'on opère la récolte des tubercules. Ceux-ci sont souvent nombreux à la base de chaque plante. Les dimensions que les feuilles de ces plantes acaules sont susceptibles de prendre dans les contrées à la fois chaudes et fraîches, obligent, à l'époque de la plantation des tubercules, à espacer ceux-ci en tous sens, de l m .20 à l m .30. Pendant la végétation, on doit avoir le soin de donner les binages nécessaires. Extraction et emplois de la fécule* Les tubercules des taccas sont oblongs ou arrondis. Leur surface est brune; leur intérieur est jaune rosé parsemé de points jaune-rougeâtre dus à un suc propre. Le procédé en usage pour retirer la fécule des tubercules est simple. On met les rhizomes à tremper dans l'eau douce, on les pèle, on les lave avec soin et on les râpe. La pulpe ainsi obtenue est ensuite lavée sur un tamis. L'eau qui provient du lavage de la pulpe est blanche et épaisse. On la laisse en repos pour qu'elle dépose la fécule qu'elle tient en suspension. Quand l'eau est presque claire, on décante, on lave la fécule à diverses reprises, puis on la met à sécher sur des toiles ou des nattes. Les rhizomes contiennent oM pour 100 de fécule qui est douce au toucher. La fécule du tacca qu'on appelle souvent fécule depia, arrow-root taitien ou arrow-root de pia est blanc-gris, inodore, douce au toucher, très nourrissante et supérieure au sagou. Elle se transforme dans l'eau bouillante en une sorte de gelée qui est très agréable ; sous l'action de la vapeur de l'iode, cette fécule devient violet-rougeâtre. Le lavage lui enlève son principe amer. Avec le lait du cocotier, elle sert à Taïti à préparer le poe pia. 15.
