Osmanlı Hekimlerinin En Önemli Görevi: Gıda mı Deva mı?<br />
Osmanlı Tıbbı, binlerce yıllık “Eski Tıb”bın bilgilerini kendi süzgeç ve tecrübelerinden geçirerek oluşan gelişmiş<br />
bir tıp idi. 19. yüzyıldan sonra tüm dünyada değişen tıpla beraber Osmanlı tıbbı da şimdiki evrensel tıbbı kabul etmiş ve<br />
uygulamıştır. Klasik dönem Osmanlı Tıbbını uygulayan Osmanlı hekimleri için en önemli hedef öncelikle sorumlu olduğu<br />
insanların sağlıklı yaşamalarını sağlamaktı. Hastalanan insanları tedavi etmek ise hekimin ikinci sıradaki görevi idi. Bu<br />
sebeple hekim sağlıklı yaşam kurallarını çok iyi bilmeli ve bunu öğretmelidir. Sağlıklı yaşam kurallarının en önde gelen<br />
disiplini yeme-içme disiplinidir ki bunun başında da yenilip içilenlerin gıda-deva özelliği gelir. Osmanlı tıp öğretisine göre<br />
hekimin ustalığı gıda-deva özelliklerini ayırabilme bilgisi ile ölçülür.<br />
Osmanlı hekimleri gıda özelliğinde olan yiyecekleri çok net olarak seçmiş ve nedenlerini de kitaplarında açıklamışlardır.<br />
Yenilenlerin gıda olarak nitelendirilmesindeki amaç bedenin ihtiyacı olan kanı sağlamaktır. Bu sebeple “iyi gıda”<br />
konusunda hekimler hemfikirdirler. Bunlar “mutedil” tabiatta olup iyi kan yapar ve insanın ihtiyacını karşılar. Bu gıdalar<br />
çok iyi tarif edilmiş olup bunların dışındakiler ilaç özelliğinde olup yenildiği zaman bedende istenmeyen maddeler meydana<br />
getirirler. Bu maddeler de hastalıkları yaratacak olan ortamı hazırlar.<br />
Osmanlı hekimleri çok iyi bilirler ki deva yani ilaç özelliğindeki pek çok ot gıda olarak tüketilmektedir. Öncelikli<br />
görevleri bunların ilaç niteliğinde olduğunu anlatmak ve eğer yenecekse o zaman bedene zarar vermemesi için o niteliğini<br />
düzeltecek dengeye getirecek, zararını önleyecek gıdalarla beraber nasıl pişirileceği ve yeneceğinin öğretilmesidir.<br />
Bu bildiride, Klasik dönem Osmanlı tıp kitapları esas alınarak hekimlerin gıda-deva seçimleri, bunların nedenleri<br />
ve Osmanlı mutfağını etkilemeleri anlatılacaktır.<br />

The Most Important Duty of the Ottoman Physicians: Is It Aliment or Cure?<br />
The Ottoman medicine was an advanced medicine that ingenerated with knowledge of the “Old-Time Medicine”<br />
filtering them from own experiences. After 19 th century, the Ottoman medicine, acknowledged the current universal medicine<br />
and practiced it in parallel changed medicine all over the world. The most important goal for the Ottoman physicians<br />
practiced the Ottoman classical period medicine was primarily to provide a healthy life for the people who were under<br />
physicians’ responsibility. To treat the sick people was secondary duty of the physicians. Therefore the physicians had to<br />
know and teach rules for the healthy life very well. The foremost rule for the healthy life was eating and drinking discipline<br />
and the foremost feature of food and drink was about aliment-cure (Gıda-Deva in Turkish). According to the doctrine of the<br />
Ottoman medicine, craftsmanship of the physician was measured by means of knowledge on being able to separate the<br />
aliment-cure feature.<br />
The Ottoman physicians had clearly chosen food having the aliment feature and also explained the reasons of<br />
this choice on their books. Purpose of the definition of food as the “aliment” was to provide blood that the body did need.<br />
For this reason, the physicians had the same opinion about the “good aliment”. The foods called as aliment were “moderate”<br />
nature, made blood and met the needs of the people. These foods had been described very well, the others apart from them<br />
were medicine-feature and they generated undesirable substances in the body when they were being eaten. The substances<br />
generated the environment that caused diseases.<br />
The Ottoman physicians knew very well that many herbs, which had medicine-feature and were defined as “cure”,<br />
consumed as food. The first duty of the physicians was to explain that the herbs had the medicine-feature, and was to teach<br />
how to cook and eat them with the foods, which could eliminate the medicine-feature; could equilibrate each other; could<br />
prevent damage, for preserving the body if they were being eaten.<br />
In this study; the aliment-cure choice of the physicians, the reason of the choice and their influence on the Ottoman<br />
cuisine will be explained in the light of the Ottoman medical books of the classical period.
