Geç Dönem Osmanlı Saray Mutfak Kültüründe Ziyafetler ve Yemekler<br />
19. yüzyılda geç dönem Osmanlı saray mutfak kültürü tüketilen gıda maddeleri, değişen sofra düzeni ve adabı,<br />
sofra ve mutfakta kullanılan araç ve gereçlerin niteliğiyle önceki yüzyıllara kıyasla köklü değişimlerin yaşandığı bir dönemdir.<br />
Sultan II. Mahmut’un (1808-1839) saltanatının son yıllarından itibaren gözlemlenebilen alaturka ve alafranga mutfak<br />
ve sofra düzenlerinin sarayda bir arada uygulanmasıyla ortaya çıkan mutfak kültürü ikilemi, imparatorluğun sonlarına<br />
kadar devam etmiştir. Bu çalışmada 1908 ve 1918 yılları arası, işgal öncesi İstanbul’da, sarayda bir yanda yabancı misafirler<br />
ağırlanırken düzenlenen gösterişli ziyafetler ve diğer yanda sarayın gündelik hayatında tüketilen yemekler ele alınacaktır.<br />
İncelenen döneme ait Başbakanlık Osmanlı arşivinde ve özel arşivlerde bulunan saray ziyafet mönüleriyle, Yıldız ve Beşiktaş<br />
saraylarına ait günlük yemek listeleri ve yiyecek masraf defterlerine dayanan bu çalışma, dönemin siyasi konjonktürü<br />
içinde Osmanlı sarayında alafranga stilde düzenlenen diplomatik ziyafetlerin içeriğini anlatarak bu ziyafetlerin simgelediği<br />
anlamı çözümleyecek ve bu alafranga yemeklerin sarayın gündelik hayatında yer alıp almadığını sorgulayacaktır.<br />
Sarayda günlük çıkan yemek listeleri incelendiğinde sunulan alaturka yemeklerin sadeliğiyle, ziyafet mönülerinde yer alan<br />
alafranga yemeklerin gösterişi arasında ortaya çıkan tezat görünüm, Osmanlı sarayında yabancı misafirler için düzenlenen<br />
alafranga ziyafetlerin aslında sadece diplomatik bir anlam içerdiğini göstermektedir. Mönülerde yer alan klasik Fransız<br />
mutfağına ait karmaşık yemek ve tatlılar sarayda gündelik hayatta pek tüketilmemektedir.<br />
Banquets & Daily Meals in Late Ottoman Palace Culinary Culture<br />
Ottoman palace culinary culture in the 19th century reveals important changes compare to the previous centuries<br />
in regards of consumption of new types of food, new table manners and new tableware and kitchenware. The existence<br />
of two different kinds of cuisine and table manners in traditional style (alaturka) and in European style (alafranga) caused a<br />
duality in the Ottoman palace since the last years of the reign of Sultan Mahmut the second (1808-1839). This culinary duality<br />
lasted until the end of the empire. The sumptuous banquets organized for the foreign dignitaries in the Ottoman palace<br />
and the modest meals of the daily life in the palace on the eve of the occupation of Istanbul, from 1908 to 1918 constitute the<br />
subject of this study. Examples of the Ottoman palace menus served to the foreign guests and the menus of daily meals in<br />
Yıldız and Beşiktaş palaces taken from the Ottoman archives in Istanbul are the primary sources used in this study. The aim<br />
of this paper is to analyse the European style diplomatic banquets organized for the foreign guests in the Ottoman palace in<br />
order to reveal their symbolic meaning in political framework of the time and to ask if these European styles food and dishes<br />
presented in the banquets are served also to the palace inhabitants in daily life. The modest quality of the dishes served<br />
everyday in the Ottoman palace contrast with the French style dishes served during the imperial diplomatic banquets. This<br />
duality implies that the choice of the European style dishes for the banquets reflects a diplomatic purpose of the Ottoman<br />
government. Examples of dishes from the classical French cuisine did not become a part of late Ottoman palace cuisine.<br />
