2 1/2 cups red wine<br />

1 1/4 lbs button mushrooms<br />

and remove their stalks. Add them to the red wine with a pinch of salt and a generous grind of black<br />

pepper. Bring the wine back to the boil and simmer gently for 5 minutes. Remove from the heat. Just<br />

before serving, stir in the fresh coriander. Serve warm or cold.<br />

Beets with Leek and Coriander<br />

2 lbs fresh young beets scrubbed and thickly sliced<br />

1 lb trimmed leeks, thickly sliced<br />

1 tsp ground cumin<br />

1 tbsp chopped fresh coriander (cilantro)<br />

2 1/2 cups sweet white wine<br />

salt and pepper<br />

Put the beets with the leeks and spices in a heavy bottomed pan. Add the wine, bring to the boil and<br />

simmer for 30 minutes or till the beets are tender. Season to taste with salt and pepper and server either<br />

hot or cold.<br />
