Heat 2/3 cup soymilk in a sauce pan. Meanwhile mix the 2 tbsp soymilk and the cornstarch. When the<br />

soymilk is boiling pour it onto the cornflour mixture, stir, then return the mixture to the saucepan, bring to<br />

boil stirring constantly and boil for a minute or so.<br />

Slice the banana into a dessert dish and pour the thickened soymilk on top. Leave to cool, then<br />

refrigerate until ready to eat.<br />

Curried Tofu for One<br />

1/2 cup brown rice<br />

1 small onion<br />

1 tbsp margarine<br />

5oz (140g) tofu<br />

1/2 tsp ground coriander<br />

1/2 tsp ground cumin<br />

1/4 tsp turmeric<br />

1/4 test chilli powder<br />

1/2 tsp garam masala<br />

2 tbsp water<br />

1 tbsp tomato paste<br />

1 tbsp soy yoghurt<br />

sea salt as required<br />

Cook the rice until tender<br />

Chop the onion. Saute in the margarine in a saucepan for about 3 minutes. Meanwhile drain and dice the<br />

tofu.<br />

Lower heat and stir in the spices. Then add the tofu, stirring well – but gently so that it is well coated<br />

with the spices. After a minute or two add the water and stir in the tomato paste. Cover the pan and<br />

simmer for about 10 minutes.<br />

Stir in the soy yoghurt, taste for seasoning and add salt if desired.<br />
