Chop the onions and slice the peppers into thin slivers<br />

Sauté the onions in the oil until they start to turn brown, then add the peppers.<br />

Cube the cooked potatoes and add these to the pan. Sprinkle with paprika and salt and seeds. Fry<br />

lightly stirring well.<br />

Pour on the yoghurt, heat through without bringing to the boil, and serve.<br />

Hazelnut and Potato Patties<br />

2 onions<br />

2 tbsp vegetable oil plus additional for frying<br />

2 tsp yeast extract<br />

680g/ 1 1/2 lbs cooked, peeled potatoes<br />

170g/ 1 1/2 cups hazelnuts<br />

chop the onions and fry them in the oil for a few minutes until they begin to brown.<br />

Remove from the heat and add the yeast extract. Mash the potatoes and add them to the pan.<br />

Grind the nuts (if they are lightly roasted and blanched before hand the flavour will be better). Add them<br />

to the potato mixture and knead well with your hands.<br />

Form into patties (about 16) and shallow fry them until browned on both sides.<br />

285g / 10oz wholemeal spaghetti<br />

1 small onion<br />

55g / 1/4 cup vegan margarine<br />

40g / 1/3 cup wholewheat flour<br />
