2 tbsp cold water<br />

melt the nut butter in a heavy pan and make sure the bottom and sides are coated.<br />

Put the peeled onions in the pan with the fruit juice and sprinkle with sugar. Cover and simmer until<br />

tender (about 20 minutes).<br />

Remove the onions from the pan and place on a serving plate. Mix soya flour and water and add it to the<br />

onion liquid in the pan and cook gently for a few minutes, stirring. Pour over the onions and serve.<br />

Bircher Potatoes<br />

Scrub and thickly slice potatoes. Place in well-oiled shallow baking tin, sprinkle with caraway seeds and<br />

a little salt. Bake for 30 minutes at 400F/200C or until the potatoes are brown and crispy.<br />

Stuffed Butter Bean (lima bean) Roast<br />

4oz (115g) dried butter beans<br />

1 medium onion<br />

2oz (55g) wholemeal breadcrumbs<br />

1 tsp soya flour<br />

seasoning (dried herb mix, salt and pepper, etc, to taste)<br />

1/2 tsp sage<br />

1 large ripe tomato<br />

Soak butter beans overnight. Remove outer skin. Place in a sauce pan and cover with water. Simmer<br />

until soft (about 50 minutes).<br />

Chop onion and fry lightly, until translucent<br />

Mix means, breadcrumbs, soya flour, seasoning and onion together, form into a roll. Cut through centre,<br />

lengthwise. Lift off top half<br />

Place thick slices of tomato on bottom half and replace top half, cover with greased paper.<br />
