Red Cabbage with Sake on Rice Noodles<br />

2 tbsp sesame oil<br />

2 garlic cloves, crushed<br />

1 red cabbage, finely sliced<br />

8 spring onions, finely sliced<br />

5 carrots, finely sliced<br />

5 celery sticks<br />

4 tbsp soy sauce<br />

4 tbsp sake<br />

350g (12oz) rice noodles<br />

1 bunch of chives, finely chopped to serve<br />

Heat the sesame oil in a saucepan. Add the garlic, cabbage, spring onions, carrots and celery and sauté<br />

over a moderate heat for 10 minutes until the vegetables are soft. Stir in the soy sauce and sake and<br />

simmer, covered, for a further 15 minutes or until the vegetables are cooked to your taste.<br />

Meanwhile, cook the rice noodles according to the instructions on the packet.<br />

Transfer the noodles to a large warm bowl, spoon the vegetables on top. Scatter fresh chives over the<br />

top. Serves 4.<br />
