Squash over Rice<br />

2 tbsp mustard oil (or vegetable oil)<br />

1/2 tsp black mustard seeds<br />

1 tsp seeded, chopped fresh green chili (or to taste)<br />

1/2 tsp turmeric<br />

2 cups mashed, cooked butternut squash<br />

1/2 tsp salt<br />

3 tbsp fresh lime or lemon juice<br />

heat oil in a skillet over medium low heat and fry the black mustard seeds. As soon as the seeds start<br />

popping, add green chili and turmeric and stir a few times. Add squash and salt.<br />

Fry for 2 minutes, stirring often. Remove from heat. Blend in lime juice. Serve a small amount over plain<br />

boiled rice garnished with green chili.<br />

Chutney<br />

1/2 cup water<br />
